Meal Plan Monday #3

Last week was all about easy meals. Big batches, short prep times, and lots of recipes that held up to freezing for later consumption. I hope you’ll find something to try!

Disclaimer: I eat a mostly vegetarian diet, my husband is low-carb, and our 1 year old daughter eats a little bit of everything.

Breakfast

Cheesy Sausage Puffs This is a great low carb, grab and go breakfast. I put half of them in the freezer so they would last the week and Aurelia even ate them too!

Lunch

Buffalo Chicken Lettuce Wraps We loved this recipe because the chicken was easy to prepare and all Hayden had to do was assemble his wraps when he came home for lunch each day.

Hummus Wraps I had some veggies and hummus that I needed to use up so I bought spinach wraps from Aldi and voila! Delicious wraps for lunch.

Dinner

Pan Fried Sesame Tofu with Broccoli Rice bowls are my favorite type of meal – add crispy fried tofu and a delicious sauce and you can’t beat it!

Slow Cooker Vegetarian Chili Mac There’s nothing better than the ease of slow cooker meals. Dump a few cans and seasonings in, set it, and come home to a hearty meal all ready to go! I was afraid we wouldn’t eat all of this so I immediately froze half of it. We went through the fresh half so fast that we can’t wait to pull the other half out of the freezer on a busy night when we don’t feel like cooking.

Creole White Beans with Chicken Another favorite from Budget Bytes. If you read the comments on her post there are a ton of ways to customize this meal – use canned beans, make it in the slow cooker, omit the chicken for a vegetarian option. That’s what I do so I’ll load it up with more veggies and serve it over rice with crusty bread to make it nice and filling.

Pizza Aldi always has unique pizza choices so I’ve made it a habit lately to put it on the menu. This week we had their Pear and Blue Cheese Flatbread Pizza – it was heavenly!

Aurelia’s Menu

Breakfast I found mini pancakes in the freezer section at Aldi this week that I thought Aurelia would love after having waffles – nope! So instead she helped Hayden eat up the sausage puffs (loved them) with fruit for breakfast this week.

Lunch Do I have to say it? Scrambled eggs, fruit and avocado!

Dinner I found a great recipe for Mini Meatloaf on a Facebook group. I froze half on a baking sheet, transferred to a gallon ziploc bag and pulled out 3-4 each day for dinner. Aurelia loved them!

1 lb ground meat
2/3 cup bread crumbs
1 egg
2/3 cup milk
1/4 of a large onion
2/3 cup minced or pureed veggies
1 Tbsp ketchup
1 Tbsp Worcestershire
1 Tbsp mustard powder
pinch of Italian herbs

 

Bake in a mini muffin tin at 350 degrees for about 25 minutes.

    1. Thank you Angela! Since I’m vegetarian I haven’t tried them but the husband and kiddo approve 😉
